Frequently asked questions
Are all Nitra recipes vegetarian?
Yes. Every recipe on the Nitra site is vegetarian, and many are also vegan; each recipe is labelled so you can filter by diet. Recipes are written around Nitra rice, pulses, spices, flours, condiments and ready meals, and each lists the Nitra products used.
How do you make vegetable biryani at home?
Par-cook soaked basmati to about 70 per cent. Separately cook mixed vegetables with onions, yoghurt, ginger-garlic paste and biryani spices. Layer rice over the vegetables, add fried onions, mint, coriander and saffron milk, then seal and cook on low heat (dum) for 20 to 25 minutes.
What is the difference between pulao and biryani?
In pulao, rice and vegetables cook together in one pot with measured water and mild spices. In biryani, rice is par-cooked separately and layered with a spiced, richer vegetable masala, then steamed on dum. Biryani is usually more aromatic and layered; pulao is simpler and quicker.
How do you make jeera rice like a restaurant?
Use rinsed, soaked basmati. Heat ghee, add cumin seeds, a bay leaf and whole spices until fragrant, add the drained rice and toast gently for a minute. Add 1.5 cups hot water per cup of rice with salt, cook covered on low heat for 10 to 12 minutes, then rest.
What is the difference between dal tadka and dal fry?
In dal fry, cooked dal is simmered in a masala of onions, tomatoes and spices. In dal tadka, the cooked dal is finished with a tempering (tadka) of hot ghee or oil with cumin, garlic and dried chillies poured on top just before serving. Both usually use toor dal.
Why are my idlis hard?
Hard idlis usually come from under-fermented batter, too little urad dal, grinding the batter too coarse or too thick, or over-steaming. Use about 1 part urad dal to 3 or 4 parts idli rice, ferment until the batter has risen and smells slightly sour, and steam for 10 to 12 minutes.
