Green Lentil Tadka Dal

A simple, everyday dal where whole green lentils are simmered until soft and finished with a sizzling garlic tempering.
Method

Cook the lentils
Boil the green lentils with the turmeric and water for 20–25 minutes until completely soft, skimming any foam that rises to the top.

Season the dal
Once soft, season with salt and mash lightly with the back of a spoon for a creamier consistency.

Make the tempering
In a small pan, heat the ghee and add the mustard seed, garlic, dried chillies and asafoetida. Fry until the mustard seed crackles and the garlic turns golden.

Combine
Pour the sizzling tempering over the dal immediately — it should audibly sizzle as it hits the pot.

Finish
Stir once to combine, garnish with coriander, and serve hot with rice or roti.
Let the garlic turn golden but not brown in the tempering — burnt garlic will make the whole dal taste bitter.
