Thai-Style Vegetable Fried Rice with Jasmine Rice
- Vegetarian
- Thai
- 25 min
- Serves 4
A Thai-style fried rice made with fragrant jasmine rice, crisp vegetables, garlic and a little green chilli. Soft, separate grains and a quick wok finish make it a 25-minute weeknight dish.
Method
- 1
Cook the rice ahead
Rinse the jasmine rice until the water runs nearly clear, then cook with 3 cups of water for about 12 minutes until tender. Spread on a tray and let it cool completely, or chill for 1 hour.
- 2
Heat the wok
Heat the oil in a wok or large pan over high heat until it just begins to shimmer.
- 3
Fry the aromatics
Add the garlic paste and green chilli paste and stir for 20 seconds until fragrant.
- 4
Add the vegetables
Add the carrot, green beans, pepper and corn. Stir-fry on high heat for 3 to 4 minutes so they stay crisp.
- 5
Add the rice
Tip in the cooled rice, breaking up any clumps, and toss for 3 minutes until every grain is hot and lightly coated.
- 6
Season
Add the soy sauce, sugar, white pepper and salt. Toss for another minute, then fold in the spring onions.
- 7
Serve
Serve hot with lime wedges and fresh coriander.
Day-old, cooled rice gives the most separate grains. Warm, freshly cooked rice turns sticky in the wok.
