Everyday Tomato Rice

A quick, tangy tomato-based rice that turns Sona Masoori’s light, everyday grains into a complete meal in well under half an hour.

Method

    Cook and cool the rice

    If not already done, cook the Sona Masoori rice and spread on a plate to cool while you make the masala.

    Temper the spices

    Heat the oil in a pan, add mustard seed and urad dal, and fry until the mustard crackles and the dal turns golden.

    Cook the aromatics

    Add the curry leaves and onion, and sauté 4–5 minutes until the onion softens and turns translucent.

    Cook the tomatoes

    Add the chopped tomatoes along with coriander powder, turmeric and chilli powder. Cook 8–10 minutes, mashing lightly, until the tomatoes break down into a thick masala.

    Combine with rice

    Season with salt, then fold in the cooled rice, tossing gently until every grain is coated in the tomato masala.

    Warm through and serve

    Cook for a final 2–3 minutes to heat the rice through, then serve hot, with a side of yoghurt if you like.

Nitra tip

Using rice that’s been cooked and cooled (even chilled overnight) gives a far better texture here than fresh, warm rice, which tends to turn sticky.
