Classic Semolina Kheer

A quick, comforting milk pudding made from semolina rather than rice — ready in half the time of a traditional kheer.
Method

Roast the semolina
Heat the ghee in a heavy pan and roast the semolina over medium-low heat, stirring constantly, for 3–4 minutes until lightly golden and fragrant.

Add the milk
Pour in the milk gradually, whisking to prevent lumps, and bring to a gentle simmer.

Cook until thick
Simmer, stirring frequently, for 12–15 minutes until the mixture thickens to a smooth, pourable pudding — it will continue to thicken slightly as it cools.

Sweeten
Stir in the sugar and crushed cardamom, and simmer a further 3 minutes.

Garnish and serve
Toast the cashews briefly in a dry pan, scatter over the kheer, and serve warm or chilled.
Keep whisking as you add the milk to the roasted semolina — this single step is what prevents lumps from forming.
