Warm Spiced Rice Pudding with Mace

A simple milk-based rice pudding with a subtle, warming spice note from a small piece of mace.

Method

    Simmer the rice in milk

    Add the rice to the milk in a heavy-bottomed pot and bring to a gentle simmer, stirring occasionally.

    Cook until soft

    Simmer for 25–30 minutes, stirring regularly, until the rice is very soft and the milk has thickened.

    Add sugar and mace

    Stir in the sugar and the piece of mace, and simmer a further 5 minutes.

    Remove the mace

    Fish out the mace before serving, as it's meant to flavour the pudding rather than be eaten.

    Garnish and serve

    Garnish with chopped cashews and serve warm.

Nitra tip

Mace's flavour is more subtle than cinnamon or cardamom — simmer it a little longer than you'd expect to fully draw out its aroma.
