Dal-Stuffed Paratha

A clever way to use up leftover dal — mashed, spiced mutter dal stuffed inside whole wheat flatbread and griddle-cooked until crisp.

Method

    Season the dal filling

    Mix the well-drained, mashed dal with ajwain seeds, chilli powder and salt until evenly combined. It should be dry enough to hold together, not runny.

    Make the dough

    Knead the atta with water and a pinch of salt into a soft, smooth dough. Rest it, covered, for 15 minutes.

    Stuff the paratha

    Divide the dough into balls, flatten each into a small disc, place a spoonful of dal filling in the centre, and gather the edges to seal.

    Roll out gently

    Flatten the stuffed ball carefully and roll into a paratha, dusting with flour as needed to prevent the filling from tearing through.

    Cook on the griddle

    Cook on a hot griddle with a little ghee on each side, pressing gently, until golden-brown spots appear on both sides.

    Serve

    Serve hot with yoghurt or a spoon of Nitra Green Sandwich Chutney.

Nitra tip

Make sure the dal filling is well drained — excess moisture is the most common reason stuffed parathas tear while rolling.
