Star Anise Vegetable Biryani

A fragrant vegetable biryani where star anise adds a distinctive liquorice note among the whole spices.

Method
- 1
Marinate the vegetables
Whisk the yoghurt with salt and toss in the chopped vegetables. Marinate 20 minutes.

Par-cook the rice
Boil the rice with the star anise and other whole spices for 6–7 minutes until about 70% cooked. Drain.

Cook the vegetable masala
Heat the ghee and cook the marinated vegetables for 10 minutes until nearly tender.

Layer
Layer the vegetable masala and rice in a heavy pot, topping with fried onions.

Dum-cook and serve
Seal and cook on the lowest heat for 20 minutes, then rest 10 minutes before folding the layers together and serving.
Nitra tip
Two star anise pods are enough for a full pot — its liquorice flavour is strong and can easily overpower the other spices.
