How Much Rice Per Person: A Party and Iftar Planning Guide

Plan about 75 to 100 g of uncooked rice per adult when rice is a side with curries, and 125 to 150 g when biryani or pulao is the main dish. So 1 kg of uncooked basmati makes a main-course biryani for about 7 to 8 adults, or plain rice for 10 to 12.

Rice roughly triples in volume and weight when cooked, so small errors in the raw quantity become big pots of leftovers or empty serving dishes. Planning rice for iftar

Iftar has its own rhythm. Most people open the fast with dates, water and something light, pray, and then come back to the main meal. Appetites for rice are often smaller than at a weekend lunch, because guests fill up on fried snacks, fruit and drinks first.

Iftar rice quantities

  • Iftar with a large snack spread (pakoras, samosas, chaat, fruit): plan 75 to 100 g of uncooked rice per adult, even for biryani.
  • Iftar dinner where biryani is the main event: plan 110 to 125 g per adult.
  • Suhoor: lighter dishes such as curd rice or khichdi, about 50 to 75 g per person.

For a 20-person iftar with a full snack table, 2 kg of basmati for biryani is usually enough. Cook the rice close to serving time and hold it covered on very low heat so it stays fluffy.

How to scale a biryani recipe without losing texture

Scaling rice is not just multiplying. Large pots hold heat longer, so the rice keeps cooking after the flame is off.

  • Par-boil in batches of no more than 2 kg of rice per pot of boiling water, so the water returns to the boil quickly.
  • Drain slightly earlier than you would for a small batch, at about 65 to 70 per cent done, because the dum stage will be longer.
  • Layer wide, not deep. Two medium pots cook more evenly than one very deep pot.
  • Use sella for buffets. Parboiled basmati stands up to an hour or two in a chafing dish without breaking.
  • Salt in stages. Salt the boiling water and the vegetable layer separately, then taste before sealing.

Leftovers and food safety

Cooked rice should be cooled quickly and refrigerated within 1 to 2 hours of cooking. Spread it on a tray to cool faster, then store it covered in the fridge and use it within 1 day. Reheat only once, until steaming hot all the way through. Leftover plain rice makes good fried rice or lemon rice the next day.
