Classic Dal Tadka

The everyday dal found on every Indian table — soft, buttery toor dal finished with a garlicky, cumin-scented tempering.

Pressure-cook the dal
Cook the toor dal with the turmeric and water in a pressure cooker for 3–4 whistles, until completely soft and mushy.

Mash and season
Whisk the cooked dal smooth and season with salt, adding a little hot water if it's too thick.

Make the tadka
Heat the ghee in a small pan, add cumin seed, garlic and dried chillies, and fry until the garlic turns golden and fragrant.

Add tomato to the tadka
Stir in the chopped tomato and asafoetida, cooking 2–3 minutes until softened.

Combine and simmer
Pour the tadka over the dal, stir to combine, and simmer 5 minutes for the flavours to meld before serving.
A dal tadka is only as good as its tempering — make it fresh just before serving so it still sizzles when it hits the pot.
