A Vegetarian Iftar and Eid Menu with Indian Flavours

Vegetarian Indian dishes including biryani, dal and paneer curry for an iftar and Eid table, made with Nitra

A balanced vegetarian iftar opens with dates, water and a chilled sharbat, moves to two or three snacks such as pakoras, samosas and fruit chaat, then serves a main of vegetable biryani or pulao with dal, a paneer curry, raita and rotis, and ends with saffron kheer. The same menu, scaled up, works for Eid lunch.

This menu is built for a home host cooking for about 8 adults, with dishes that can be prepared in stages so you are not frying at the moment the fast breaks. Every dish is vegetarian, and most can be made partly or fully ahead.

Opening the fast: dates and drinks

Dates and water come first. Serve two or three varieties of dates on a platter, some stuffed with almonds or pistachios. Alongside, offer a chilled lemonade sharbat with mint, or rose milk. Keep drinks lightly sweet; a heavy sugar syrup is tiring after a long fast.

The snack course

Vegetable pakoras

Onion, potato, spinach and green chilli pakoras in a spiced besan batter are an iftar classic. Prepare the batter and slice the vegetables in the afternoon, then fry in small batches 10 minutes before the fast breaks. See crispy vegetable pakoras. Serve with green chutney and ketchup.

Samosas

Make the spiced potato and pea filling and shape the samosas the day before. Keep them covered in the fridge and fry or bake from chilled. Serve with a sweet date tamarind chutney.

Fruit chaat or dahi puri

A fresh course balances the fried snacks. Toss watermelon, apple, banana, pomegranate and guava with lemon, black salt and chaat masala just before serving, as in the fruit chaat with black salt. For a richer option, set out dahi puri with whisked yoghurt and chutneys.

The main meal

Vegetable dum biryani

Biryani is the centrepiece. Use long-grain basmati such as Nitra Zaiqa-E-Hind, or 1121 sella if the pot will sit on the table for a long time. Layer par-boiled rice over a spiced vegetable and paneer base, drizzle with saffron milk and fried onions, seal, and cook on dum. Dal

A simple toor or moong dal tadka is light after a fast. For Eid, a slow-cooked dal makhani is more festive and tastes better made the day before.

Paneer or chickpea curry

Choose one rich curry: paneer butter masala, matar paneer, or chana masala. Make it in the morning; it reheats well.

Raita and breads

Cucumber or boondi raita cools the spice of the biryani. Allow two to three rotis per guest. If time is short, a ready-to-eat curry or biryani pouch can fill a gap for a late guest.

Dessert: kesar pista kheer

Rice kheer with saffron, cardamom and pistachios can be made a day ahead and served chilled or warm. For 8, simmer 1.5 litres of milk with about 75 g of rice until thick, then add sugar, cardamom and 20 threads of bloomed saffron. See the kesar pista kheer recipe. Adapting the menu for Eid

Eid lunch is usually larger and more relaxed, with guests arriving through the day. Double the main course, swap the fried snacks for chaat platters that can sit out, and add a second rice dish such as saffron pulao or jeera rice. Set up desserts as a separate table so they do not crowd the mains.
